Ingredients

5 cups cooked rice, chilled

½ pound ground meat

½ pound pork sausage

3 tablespoons grapeseed oil

1 cup chopped yellow onion

¾ cup chopped green bell pepper

¼ cup chopped celery

2 teaspoons minced garlic

2 cups unsalted chicken stock

2 bay leaves

1 teaspoon ground black pepper

1 teaspoon salt

¼ cup minced fresh parsley

Directions

  1. Brown the meat.

    In a large, heavy sauté pan, heat 2 tablespoons of grapeseed oil over medium-high heat. Add the ground meat and pork sausage, season with salt and pepper, and cook until browned, breaking the meat apart with a spoon.

  2. Add the vegetables and seasoning.

    Add the remaining tablespoon of oil, chopped onion, bell pepper, celery, minced garlic, P’Maws Cajun Shake, salt, and pepper. Continue cooking.

  3. Build the flavor.

    Add the chicken stock and bay leaves. Scrape the bottom of the pan to release the browned bits and keep them from burning.

  4. Simmer.

    Bring the mixture to a boil, then reduce the heat and simmer for 5–7 minutes.

  5. Add the rice.

    Stir in the chilled, cooked rice and mix thoroughly. Continue cooking until the rice is heated through.

  6. Finish and serve.

    Remove the pan from the heat and discard the bay leaves. Top with fresh parsley before serving.


A few tips for making great Cajun dirty rice

Start with chilled rice. This recipe specifically calls for cooked, chilled rice. Using rice that's already prepared makes the dish especially convenient for a quick meal.

Don't skip the browned bits. When you add the chicken stock, scrape the bottom of the pan. Those browned bits are part of the flavor you've developed while cooking the meat and vegetables.
